Homestead Berry Chicken Salad

Sweet berries, savory chicken, tangy feta, and a raspberry vinaigrette — easy enough for a weeknight, pretty enough for company.

Ingredients

6 cupsbaby spinach
2 cupsshredded rotisserie chicken
1 cupfresh strawberries, sliced
½ cupfresh blueberries
½ cupglazed walnuts or pecans
¼ cupdried cranberries
¼ cupcrumbled feta cheese
2 Tbspthinly sliced red onion
To tasteraspberry vinaigrette (see below)

Instructions

Spread baby spinach as the base in a large bowl or platter.

Layer shredded rotisserie chicken evenly over the spinach.

Scatter strawberries, blueberries, dried cranberries, and glazed nuts over the top.

Sprinkle crumbled feta cheese and red onion slices.

Drizzle with raspberry vinaigrette just before serving.

Toss gently and serve fresh. Enjoy!

Homemade Raspberry Vinaigrette

Whisk all ingredients together until smooth. Store in a jar in the fridge for up to a week. Or use Newman’s Own Raspberry Walnut Vinaigrette for a quick shortcut!

2 Tbsp raspberry jam
2 Tbsp red wine vinegar
¼ cup extra virgin olive oil
1 tsp Dijon mustard
Pinch of salt & pepper

Tips & Notes

Make-ahead: Keep dressing separate until ready to serve. Undressed salad keeps 2 days in the fridge. Dressed salad is best enjoyed the same day.

Protein swap: Rotisserie chicken makes this effortless, but grilled chicken or leftover baked chicken works great too.

Berry season: Use whatever fresh berries are in season — raspberries and blackberries work beautifully too.
